Here are a few tasty easy snack ideas that require very few ingredients or time.
Turkey Pepperoni ‘Chips’
I know it may sound weird but these crunchy bits of goodness will satisfy your need for something with substance and are a great replacement for chips.
All I do to make these guys is take Turkey Pepperoni (found in the grocery store by the deli meat and regular pepperoni) line them up on a non-stick cookie sheet and throw them in the oven @ 350° for 10-15 minutes. Sometimes I flip them partway through and other times I just leave them.
They are really good on their own but also make an excellent tool for dipping. You could also use normal pepperoni but that’s going to up the fat considerably, plus the turkey tastes just as good!
Easy Tex Mex Dip
If you are looking for a tasty dip for your pepperoni chips try making this super simple Mexican dip.
1/2 – 3/4 cup salsa
1/2 cup fat free cream cheese
1/2 cup fat free Greek yogurt (fat free sour cream can also be used)
1/2 packet taco seasoning
To make a quick and easy version just take all the above ingredients and mix them together for a creamy Mexican dip.
1 can fat free re-fried beans
1lb lean ground beef or turkey
To make a layered version simply mix some re-fried beans with avocado and spoon it into a serving dish, next add the ground beef/turkey and top with the salsa/yogurt mixture. You could really layer it however you want so play around with it.
Ricotta Cheese Chocolate Goodness or “Faux Mousse”
Ok so I don’t really have a set recipe for this one and can’t really remember how I came to try it either. Anyways I love this because a little bit fills me up and it reminds me of chocolate mousse.
1/4 Fat free smooth ricotta cheese
1 packet sweetener
3/4 tsp pure cocoa powder
Dash of vanilla extract
Almond Milk as needed (optional)
If you don’t like chocolate you could always use cinnamon, pumpkin pie spice, or frozen berries.
All I do is mix all the ingredients together either by hand or in my magic bullet blender. It comes out smooth and delicious (especially from the bullet). I add almond milk if I want something a little smoother and then I usually let it set in the fridge for 15 minutes. If you make this before dinner it’ll be nice and chilled when it comes out.
There is no set recipe for this as I just play around with it until it tastes right to me.
