So I had a pretty fantastic day today. I love Thursdays because they make me get that much more excited about the weekend to come. However this Thursday was super amazing because I got to meet someone who I’ve been creeping (not in a weird stalker way) on her blog and twitter. She has to be one of the most positive lovely people I’ve ever met. Just a few words from this girl could turn your whole day around. Her name…is Meg!

Ya I totally took that picture from her blog (hope she doesn’t mind). Meg has an amazing blog called A Dash of Meg where she blogs about her daily life, nutrition, and fitness. She has some awesome recipes and has a really well rounded palette which includes a love of many different types of foods. She is open and honest and really connects with her readers. This month she’s done some especially awesome posts for nutrition month as she is studying to become a registered dietitian at Brescia. She oozes positivity and is really just an all around amazing person

Meg and I somehow connected on twitter and started reading each others blogs and today we finally met face to face at the mall. She is even nicer in person (if it’s even possible).She took me took me to David’s Tea and we walked around the mall getting to know each other. She’s super laid back and easy to talk to, which I love in a person. I loved getting to know her and hope to get to know her more in the (near) future.

In other news, not nearly as exciting, I made a pretty fantastic pot roast the other night. I loved getting to just put everything in a crock pot and come home to a delicious, hearty meal.

 I simply took my roast, seasoned it, seared it in a pan with some olive oil and tossed it in a crock pot I had filled with sweet potatoes, white potatoes, carrots, and onion and let it cook for 8 hours on low. 

When I came home after work my roast was all ready to go. I took the sweet potatoes out and mashed them up for myself and made a super simple sauce to pour over the beef. The prep work for this took about 15 minutes including the searing and chopping of the veggies but it tasted as though I had slaved over this meal all day. I love homey comforting meals like this that are easy to put together and ready when you walk in the door.

    Ah I didn't get this reply until now! I can't wait to update the site. Can't wait for our next get together! As soon as I am better I am trying those sweet potatoes you posted!
