Friday!!!!! Hope the rest of you had a fantabulous (ya it’s a word) week. We have been busy here at the gym hanging banners . And, you know, training people.

Ya they’re pretty bad ass looking if you ask me.

Things here have been pretty good lately. I just got back from the bike pro shop to look at bikes for my first ride! I have decided on a hybrid bike because at my riding level there’s no need for a straight road bike. I am signed up for a 200+ km bike ride in June to raise money for the Princess Margaret Hospital’s cancer foundation. On Saturday we ride from Toronto to Hamilton then camp out overnight and wake up and ride from Hamilton to Niagara Falls on Sunday. It will most definitely be gruelling but I am doing it for a very good reason. If you want to read more about the ride or why I’m doing it you can check out my personal page for the ride here. The videos on that site are enough to make me want to jump up and ride.

Anyways last night I was fixing Steve and I some dinner and was really pleased with the outcome so I thought I’d share it with you. 

Pesto Stuffed Chicken Breasts

These were really easy to put together and were absolutely delicious. We’ll definitely be having this again soon.

Start off by preheating the oven to 375°

Next all I did was take some chicken breasts and butterfly them. If you’re unsure of how to do this there’s a quick youtube guide here. I swear you can learn anything from youtube.

Once I had the chicken all split I seasoned it with salt & pepper and then put pesto and cream cheese in the middle. About 2 Tbs of each – I didn’t really measure.

Then I rolled it all up and used toothpicks to hold it all together. Once it was rolled up I dredged it in some almond meal.

Next I seared it in a pan with the seam side down first. I let it sear for about 3 min per side.

Next I popped them in a dish and into the oven they went. I think they took about 20 min in the oven. I use a thermometer for everything so sometimes I forget how long stuff cooks for.

This was really good. The cream cheese and pesto are perfect paired together. Just make sure you remove the toothpicks before you dig in or you could have an accident.

I’m also going to post that yummy baked oatmeal recipe once I get home and can snap some shots of it.
