Hope everyone had a great weekend – I can’t believe how beautiful it was outside! I wanted to say thank you for all of the sweet emails, texts and well wishes after my last post. Every kind word truly touched me and it’s comforting to know there are others out there who understand your pain.

This weekend was a busy one. Friday night Steve stayed at the gym to get some work done (he stayed until 2am! Our university guys are coming home for the summer and he always likes to make sure he’s super organized and ready. He just loves what he does) so I went grocery shopping and headed home to have dinner by myself. I was debating getting takeout while I was at the grocery store but I’m so happy I didn’t. I made homemade shrimp pad Thai that knocked my socks off. Best thing was it was ready in 20 minutes start to finish.

I had clients in Saturday morning and then a meeting in the afternoon to attend. I was basically working from 8:30-4:30 and it was nice to come home and put my feet up after a long week. I put some ribs in the crockpot in the morning and it made for a quick and easy dinner that night.

I did the ribs in the slow cooker for 8 hours on low and them finished them in the oven under the broiler. Steve and I were famished by the time they were ready so no photo of the end product.

Sunday started off with a nice big breakfast and some recipe testing.

The donuts need a bit of tweaking but they were deeeelish none the less.

After breakfast I got together with some of my bridesmaids to go over some of the plans we have for our buck and doe in July. I am lucky to have such awesome people in my life because I would be lost trying to do this on my own.

After spending some time in the sun eating cheese and crackers and discussing plans I came home and got to work in the kitchen. Here’s what I prepped for the week ahead.

Steve and I both have a very busy week ahead and taking an hour to prep our lunches and snacks and get things together for dinner makes my life so much easier. I cooked up extra ground beef while I was making chili, marinated some chicken and put together a rough plan for the week ahead.
