How is everyone enjoying this beautiful good Friday? I have been having a pretty stellar day myself.
I enjoyed some homemade cereal for breakfast. All I do is take 1/4 cup of oats, 1/2 cup of brown rice puffed cereal, 1 heaping tablespoon of almond butter, 1 tablespoon of superfruit jelly and mix until it looks crumbly. Add almond milk and enjoy. It’s really yummy and easy to make and the combinations are endless. The puffed rice gives it a nice texture.
Chester also gave me some giggles this morning. Sometimes I just don’t know what is going through his head. He spent a good 30 minutes just tearing up and down the stairs chasing something that wasn’t really there. Then, all tuckered out he took to his perch and just stared at me.
We had a good size boot camp class in this morning and then Monica and I got our deadlift on – 5 sets of 10 at 185lbs. My grip and my legs were on fire! I generally don’t like high volume work like that while I’m doing it, but I always feel victorious when I’m done.
Came home and enjoyed a post workout quesadilla with lean turkey & cheese.
Last night was pretty great too. Steve and I enjoyed some yummy almond crusted chicken strips which I have been making much more simply than I was before. While my previous recipe is delicious, sometimes it can be a little time consuming when you’re in a hurry, or just really hungry 🙂
So last night I forwent the regular method and simply cut up the chicken strips, seasoned the almond meal with paprika, salt & pepper and then tossed the strips (in small batches) with the almond meal in a large Tupperware container. It reminded me of when I was younger and made shake and bake chicken.
I popped those babies in the oven at 375° for about 10 minutes per side.
Steve and I were so hungry I totally forgot to snap a picture of the finished product…my bad.
Anyways I’m off to get ready for a party that we’re having out at Steve’s parents place for both of our birthdays. I’ll be sure to update with pictures of the festivities. Enjoy your long weekend!
