Hey there! Hope everyone had an awesome weekend because I know I sure did.

 

Friday night my mom came over for a baking session so we could test out some of the Christmas recipes I’ll be baking over the holidays. With Steve and I leaving for Mexico in less than 2 weeks I wanted to test them out before we left so I know which ones are keepers 😉

 

We baked a bunch of yummy treats including:

Paula Deen’s Chocolate Gooey Butter Cookies

These AMAZING s’mores bars….they are like rice crispies but waaaay more awesome and delicious!

GO and make these! They require no baking and everyone will LOOOOVE them! Go…..now!

These are triple layer bars. Cookie dough, oreos, brownie mix. BOOM!

I followed this recipe. Simple, easy, amazing.

Cinnamon buns! Sorry for the blurry picture. These did not turn out as anticipated, they didn’t rise nearly enough. They were still awesome and yummy but not nearly flaky enough. I will try these again before we leave!

 

I sent some of the goodies home with my mom and made up a few trays to give to some of the guys here at the gym. I also froze a few things to see how they hold up in the freezer. We have none just lying around the house, that’s how you get into trouble 😉

 

Saturday Steve spent the day in Waterloo at a Powerlifting meet with one of our clients. It was his first meet ever and he almost broke 2 national records. I think he’ll do amazing at his next one. I spent the day working on a gift for some of my clients and then went home and put up some Christmas decor.

When Steve finally got home we went out for date night! I love nights out just the two of us and it’s been quite a while since we did dinner and a movie. We went to Jack Astor’s to start where we ate some amazing grub.

After getting our fill of yummy food we went to the movies where I finally got my movie popcorn!

 

 

It was an awesome night! The fun didn’t end on Saturday though, we had a killer Sunday too! I woke up and made us some awesome, healthy, flourless crepes. They were so easy to throw together and we filled them with jam, peanut butter & sugar free caramel sauce….yum!

 

Flourless/Grain Free Nut Butter Crepes

Serves: 1
Ingredients
  • 1 egg
  • 6 egg whites (3/4 cup)
  • 2 tablespoons Natural Nut Butter (Whatever type you like!)
  • 1 teaspoon Vanilla/Maple Extract
  • **Optional - Cinnamon
Instructions
  1. Combine egg and egg whites in a blender and mix until frothy
  2. Add in rest of ingredients and blend again
  3. Pour mixture into non-stick skillet ¼ cup or so at a time and cook for 2-3 min per side
  4. It should make between 4-6 crepes depending on how thick/thin you make them.
  5. Enjoy!

After breakfast Steve’s dad picked us up and we went to watch the London Lightning play!

 

 

The lightning is London’s local professional basketball team and are part of the National Basketball League of Canada (NBLC). I love that we have a local professional team to go watch. Yes the Raptor’s are fun to watch but that’s all the way in Toronto and makes it hard to go out to games, plus it’s expensive. I hope that the NBLC continues to grow because I think it’s great to have an Canadian league and it’s a good boost for the city. It’s great basketball and makes for a really fun day out. It also doesn’t hurt that Steve’s dad has season courtside tickets 🙂

The Lightning won 108-95!

 

We spent Saturday night just watching some TV and hanging out. I definitely had an amazing weekend.

 

A lot of you have been asking what my next plans are and what I’m doing food/exercise wise so I’ll post more about that tomorrow. For now, take it easy and make today a great day!
