Hey friends! Is it just me or has this week flown by? I am excited that it’s gone by so fast though because tomorrow night we have a girls night out planned. Dinner, drinks, awesome company and I’m sure a good deal of laughs.


Today is coming along quite nicely. I got to sleep in and have a nice leisurely morning. I had to make up some more hard boiled eggs for Steve and I remember seeing somewhere that it was possible to bake the eggs in a muffin tin rather than boil them. I was intrigued and had some time on my hands so I gave it a whirl.

I’m happy it worked because I would have been pissed to waste all these eggs


The verdict? So simple! Plus it helped make them easier to peel (score!) All I did was heat the oven to 325° pop the eggs in a muffin tin and bake for 25-30 min (I left mine for the full 30). After that I popped them in an ice bath for 10 min then peeled.

The eggs do get some tiny little brown spots on them but there is no difference in taste and I love that I can cook so many at once!

Chocolate Coconut Chia Protein Cups
Prep time
Cook time
Total time
Serves: 1
  • 1 scoop Chocolate protein powder ((you can always add cocoa to vanilla to make it chocolatey!))
  • 2 tablespoons Unsweetened Shredded Coconut
  • 1 tablespoon Chia Seeds
  • 2-3 tablespoons Water
  1. Mix all the dry ingredients together
  2. Add water until combined and the mixture is moistened but not watery
  3. Spoon mixture into muffin tin
  4. Freeze until mixture is set!


I recommend letting these thaw for a few minutes before you dig in!


Ok, so remember yesterday when I mentioned my knee pain? Ya well that hasn’t subsided yet so I’ve been having to modify pretty much everything I do. However I’m not going to let it stop me from getting in my scheduled HIIT!
