Most people have their dinner with some form of a side dish. You know you have chicken and rice or potatoes or pasta…something. Well my meal plan doesn’t allow for any of that except for after a serious workout (which coincidentally I just did, my arms are shaking right now as I’m typing they’re so tired). Well I was missing my side dish and sometimes you want more than just roasted veggies as delicious as they are. 

So what is a girl to do? Well if you’re me you whip up a batch of cauliflower rice. It’s quick and easy and can be season just like normal rice and is really versatile.


Making It:
Take cauliflower and either put it through your food processor/magic bullet and pulse until the cauliflower is a ‘rice like’ size. If you don’t have either of these gadgets a slap chop works great (I bought it solely because of the infomercial) or just chop it really fine with a knife.

Once it’s all the right size you want to cook it in the microwave. I have a tupperware steamer dish that I could not live without as I use it everyday.

 If you don’t have a steamer dish then just put the cauliflower in a bowl with some plastic wrap. What you want to do is microwave it for about 5-7 minutes depending on your microwave. Don’t add any water. Cauliflower has enough moisture on it’s own and will cook just fine without water.

You can add seasoning before you microwave the cauliflower or after. I like to add a chicken bouillon cube, the low sodium kind. You could also just do olive oil, salt & pepper, curry, Parmesan cheese, soy sauce. Pretty much anything.

The great thing is it can be used in a lot of the same places as normal rice. You can make awesome chicken fried rice or just use it as a bed to put chicken on. It’s super quick to make and you can just steam as much as you need and change the flavour throughout the week. I usually always have a tupperware container filled with chopped cauliflower that’s ready to steam.
