Hey all! Can you believe it’s the weekend already!? Tonight I’m having a girls night out and am currently sitting in my living room doing my hair – I can’t wait to dance! Since I still have a bunch of stuff to do to get ready so let’s get right into it:

This week’s high fives go to:
- Karli – After only a few weeks of strength training Karli was able to box squat 135lbs on the safety squat bar. I love that she came out of her comfort zone and really pushed herself.
- Vivette – With her wedding only 3 weeks away Vivette really wanted to see how much she could push herself. She volunteered to try our prowler challenge where you do as many 15 yard lengths as possible in 10 minutes. Vivette got 24 lengths (12 trips)! She paced herself and pushed it and I’m so super proud of her.
- Shauna, Emily, Rachael, Vanessa, Leigh-Ann, Christine – All of these ladies blew my socks off this week! They each pushed the prowler…..with 435lbs on it! They pushed and didn’t give up and it made my heart happy.

Stuffed Buffalo Chicken Breast
This is really so simple that it doesn’t really need a recipe but here is how I make one of our new favourite stuffed chicken breasts.
Take a boneless, skinless chicken breast and cut a little pocket in the middle
Stuff each chicken breast with some sliced cheese (we typically use marble) and a tablespoon or so of cream cheese
Seal the pocket with some toothpicks
Season the outside of the chicken breast with some salt and pepper – and anything else you’d like
Baste chicken with some buffalo sauce (we use Frank’s Red Hot Buffalo or original) with a tablespoon of butter melted in – the butter is totally optional
Cook chicken at 375° until the chicken reaches an internal temperature of 170° F which takes about 45 minutes or so depending on how thick your chicken breasts are
As the chicken is cooking I continue to baste it in the hot sauce to ensure it’s sticking to the meat
That’s it! If you like spicy chicken wings give this a shot. The cheese in the center helps cut the spiciness and it’s just awesome. I hope you like it!
