So after our Valentines day meal we had some leftover bruschetta mix. I already had some pre-grilled chicken breast (I always try to have cooked chicken breast on hand) and whipped up a super easy dinner in 15 minutes.


All I did was take the already grilled chicken and put it in a saute pan over medium heat and topped it with the bruschetta mix and put a lid over it to allow it to heat up all deliciously. While that was heating up I put some brown rice in the microwave to cook for about 10 minutes.



Once the chicken had heated up enough – roughly 10 minutes, I grated some low fat cheese (goat’s cheese here would be devine) over the mix and put the lid back on to let it get all gooey.


When the rice was done I mixed it up with some pesto sauce and added some fresh Parmesan cheese on top. 





Put it on a plate and dinner was served. The bruschetta mix was so good over the chicken.

Having things like pesto and different sauces and mixtures on hand make it easy to jazz up any meal without it taking a lot of time. 


I guess I’ll also share some pictures of this ah-may-zing sandwich I had for lunch the other day. It was nothing more than turkey bacon & tomato but the truffle & garlic aioli that I spread on the bread made it simply scrumptious! I also had some grapes and a side bowl of leek soup.

PC has that new black label collection and some of that stuff is lick your fingers good. I picked this up while grocery shopping on a whim and I’m glad I did. It’s like mayo to the extreme and I love that they use olive oil to make it. Won’t be using it every day but I’m glad it’s in my fridge.





Sometimes a little sauce is all it takes to bring a meal to the next level, just be sure they’re not loaded with sugar and other crap we don’t really need.
