Bacon Wrapped Baked Eggs & Long Weekend Recap

Happy happy Friday friends! With it being a short week it felt like time really flew by. Let’s do some catching up, shall we? Then I’ll share my recipe for turkey bacon baked eggs. Yum!

Steve and I were busy little beavers last weekend. We ate a lot of of delicious BBQ:

 

Salmon steaks, rainbow trout, eggs, steak, chicken, ribs….

 

Which I expertly grilled:

 

 

I also got to indulge after following my meal plan to a T for 2 full weeks!

 

Yes the eggs, sausage, hash-browns, toast & pancakes were all for me – and yes I ate it all

 

We took Tyson on his first hike! We went to Komoka conservation area, somewhere neither of us had been and it was a blast!

 

 

Tyson LOVED hiking and he loved the water even more.

 

He couldn’t get enough!

 

We saw deer, lots of pretty birds and butterflies and enjoyed some awesome munchies graciously provided by my foodie pen pal.

When we got home I loaded up on some fruit while I had the chance

 

Love me some lychee!

Raspberry smoothie made with sparkling water for fizzyness (it’s a word)

 

We drank some wine

 

 

And took in some glorious sun! It was an awesome weekend with some of my favourite people.

I also came up with a simple recipe for all of you! So here you go:

 

Bacon Wrapped Baked Eggs

Serves 1
Cook time 20 minutes
Allergy Egg
Dietary Gluten Free
Meal type Breakfast, Snack
Misc Pre-preparable, Serve Hot
These are perfect to prepare in advance for an easy on the go breakfast.

Ingredients

  • 1 Large Egg
  • 1 Slice Turkey Bacon
  • Cooking Oil
  • Salt
  • Pepper

You Should Know...

These are perfect to prepare in advance for an easy on the go breakfast. You can make a ton of them at a time and can season them up however you'd like. You can add in spinach or cheese and take them with you on the go. High in protein, low in carbs and easy to make - they are a winner!

Directions

Step 1 Preheat oven to 375°
Step 2 Place turkey bacon around edge of muffin tin (I cut it in half first as I find it wraps better)
Step 3 Bake for 10-12 minutes until bacon begins to very slightly brown
Step 4 Remove muffin tin from oven and spray bottom of muffin tin with cooking spray
Step 5 Crack egg into muffin tin and season with salt & pepper or whatever seasonings you're feelin that day
Step 6 Bake an additional 10-15 minutes or until eggs or set

    Loved the pictures sweetheart! LOVED THEM! You two always look so happy :) I love it! Tyson looks like he is having a ton of fun, too ;) I love lychees too! You must try this:

    Lychees + mandarin orange slices (like a dole container) + vanilla ice cream

    I am sure u will die and go to heaven. Food heaven ;) hehe
