Muffins are one of those tricky foods that many people consider a ‘healthy’ option. Thing is most muffins could and should count as a meal in themselves as the most popular Tim Horton’s muffins (Whole What Raspberry, Chocolate Chip and even the healthy sounding raisin bran muffin) are all in the 400-420 calorie range with most of those calories coming from unhealthy fat sources.

Here is a recipe which I once again found on T-Nation here.

2 cups almond flour
2 teaspoons  baking powder
1/4 teaspoon salt
1/2 cup omega-3 butter or 2-3 tbsp of coconut oil
4 omega-3 enriched eggs
1/3 to 1/2 cup sweetener
1/3 cup water

The Method:

  • Preheat the oven to 350 
  • Mix all the dry ingredients together
  • Mix the wet ingredients together
  • Now mix them both together

  • Pour into a Pam or coconut-oil sprayed muffin pan or use those paper cups

  • Bake for about 15 minutes

  • Add 1-2 tbsp of cocoa powder
  • Add nuts throughout or on top
  • Stir in some nut butter
  • Stir in sugar free jam

  • 1 (4 ounce) package fat-free cream cheese, softened
  • 1/4 cup omega-3 butter, softened 
  • 1 cup sweetener
  • Dash of vanilla extract

    Hi Chelsey its Denise and Kevin, so how many calories are in each muffin?

    Works out to be about 185 calories with 3g of carbs and about 6g of protein.

    The reason the calorie count is high is from the fat in the almonds – which is a good fat
